Tzatziki Chickpea Salad

A quick and easy chickpea salad with a cool and creamy tzatziki dressing!
ingredients
- 1/2 cup plain Greek yogurt
- 1/2 cup cucumber, peeled, seeded, grated, and squeezed to drain
- 1 clove garlic, minced/grated
- 1 tablespoon fresh dill, chopped *
- 2 tablespoons lemon juice (~1/2 lemon)
- salt and pepper to taste
- 2 (15 ounce) cans chickpeas, drained and rinsed.
- 1/2 cup tomato, diced
- 1/2 cup cucumber, diced
- 1/4 cup kalamata olives, sliced
- 1/4 cup feta, crumbled
- 2 green onions, thinly sliced
directions
- Mix the yogurt, shredded cucumber, garlic, dill, and lemon juice before seasoning with salt and pepper to taste.
- Toss the remaining ingredients with the tzatziki sauce (from step 1) and enjoy!
Option: Replace 1/4 cup Greek yogurt with 1/4 cup mayonnaise.
Option: Add 2 tablespoons red onion, finely diced.
Option: Add 2 stalks of celery, diced.
Option: * Use any combination of dill, mint, and/or parsley.
Option: Add 1 teaspoon lemon zest.
Option: Make it a tzatziki tuna salad by replacing the 2 cans of chickpeas with 2 (5 ounce) cans tuna, drained!
Option: Add 1 (5 ounce) can tuna, drained.
